Perfect Roast Beef Recipe
4 small onions sliced very small
3 garlic cloves, sliced very small
750 ml of beef broth
35 ml of butter, at room temperature
30 ml of Dijon mustard
1 cross rib roast beef 2kg deboned and tied back with the ribs
1) Preheat the oven at 275
2) In a pan, cook the onions and the garlic within half the butter. Place the onions in a large baking dish.
3) Pour 750 of beef broth over it.
4) Use your pastry brush to distribute equality the mustard. Add salt and pepper upon your will.
5) Cook the roast around 1 hour 30 minutes, until the roast internal temperature reach 130º F.
Cover the baking dish with aluminium. Let rest for 10 minutes before untying and slice.
